🍗 COACH KATIE’S CHICKEN SHAWARMA 🍗
2 lbs. Boneless skinless chicken thighs
1 garlic cloves (minced)
1 tbsp ground coriander
1 tbsp ground cumin
1 tbsp ground cardamom
1 tsp ground cayenne pepper
2 tsp smoked paprika
2 tsp salt
Pepper to taste
Juice of one whole lemon
2 tbsp olive oil
Toss all ingredients together and marinate overnight. Cook and serve with your favorite Mediterranean sides! Some ideas include salad mix, pita, cucumber & tomato salad, pickles, red onion, tahini, garlic sauce, and tabouli.
*It tastes best on the grill.
🍍 COACH KELLY’S PINEAPPLE JIFFY CAKE 🍍
200 grams graham cracker crumbs
20oz can crushed pineapple
20oz can pineapple tidbits
2 8oz containers cool whip (I use SF)
1 1.5oz vanilla pudding mix (I use SF FF)
670 grams greek yogurt (I use Fage 0% fat)
1.5 cups milk (I use 0% Fat Fairlife)
